Peach Cobbler

1 8" x 8" casserole dish
7 medium size fresh peaches
(or 2 1/2 cups of berries)
(or 2 1/2 cups of berries)
3 cups of water
1 1/2 cups of sugar
1 stick of butter
1 cup of self-rising flour
1 cup of milk (not skim)
1 cup of sugar
Pre-heat oven to 350 degrees.
1. Peel and slice peaches.
2. Make a simple syrup by bringing 3 cups of water
and 1 1/2 cups of sugar to boil.
3. Add sliced peaches and simmer 15-20 minutes.
4. Melt the stick of butter in an 8x8 casserole dish.
5. Mix one cup of self-rising flour, one cup of sugar, and one cup of 2% or whole milk with wire whisk until all lumps are gone and it is smooth!
6. Pour this batter over the melted butter and DO NOT STIR!
7. Gently ladel in the peaches and simple syrup over batter.
DO NOT STIR!
8. Slide into pre-heated 350 degree oven.
9. Bake 35-45 minutes (you know your oven) until cobbler
is golden brown and crust has risen to the top!
Serve the cobbler while warm and
with a scoop (or three) of vanilla ice cream on top.
This happens!
My husband likes the cobbler to be juicy, so I will often pour some
of the extra warm simple syrup over the top before serving. If you don't have fresh peaches, you may substitute canned peaches (sliced in syrup).
